El Hierro has carved out a reputation of its own as a culinary island. Both a biosphere reserve and a wine-growing region, the smallest of the Canary Islands provides ingredients that cannot be found elsewhere: Almogrote made from matured cheese, papas arrugadas made from varieties that grow only here, and wines from volcanic slopes. When you eat here, you eat locally – not as a concept, but as part of everyday life.
