At the Sócrates pub in La Laguna, the evening centres on the widespread belief that wines from volcanic soils retain the scent or flavour of the volcano. The starting point is the observation that wines from such growing regions are regarded worldwide as a category in their own right, even though volcanic soils account for only a small proportion of vineyard areas.
Rubén Barroso Martínez, a gastronome and FPU researcher at the CSIC's Instituto de Productos Naturales y Agrobiología, asks what it actually means, from a sensory perspective, to describe a wine as 'volcanic'. Another topic of discussion is whether this character can actually be detected in a blind tasting, or whether the perception is more a matter of cultural conditioning. This question is particularly relevant in the Canary Islands, with their entirely volcanic soils.
Luis Javier Capote Pérez will chair the academic session. The audience can order a glass of wine and decide for themselves whether they perceive it as 'volcanic'. The event runs from 20:00 to 22:00.
